Simple and easy. Give this a try the next time your recipe calls for blanched almonds.
INGREDIENTS
1 pound of organic almonds, shelled
Hot water
Cold water
DIRECTIONS
1. Put almonds in a bowl.
2. Just barely cover the almonds with boiling water and let almonds sit in water for only one minute*.
3. Drain the almonds and rinse with cold water. Drain again.
4. Pat almonds dry. Skins should slip off.
(*If almonds remain in hot water too long they lose their crispness.)
1 pound of shelled almonds equals 3 cups whole or 4 cups slivered.
