You will never buy almond paste again once you taste this. Every Sicilian household is familiar with how to make this paste for cookies and pastries. It’s easy and can remain refrigerated or frozen until your next use.
INGREDIENTS
1 2/3 cups of powdered organic sugar
1 ½ cup blanched organic almonds, whole
¼ cup of organic egg whites
INSTRUCTIONS
Using a food processor, process blanched almonds into a fine powder, about 2 minutes. Add powdered sugar, blend well. Transfer mixture into large bowl, mix in egg whites until smooth with a wooden spoon.
Roll out dough on a flat surface lightly sprinkled with powdered sugar into a long, round log.
Wrap in parchment paper and refrigerate for at least one hour or until you are ready to use.
Almond paste can be stored in an airtight container in the refrigerator for one week. Can also be frozen for later use.
