We love this recipe from The Silver Spoon for Children: Favorite Italian Recipes. You don’t need an ice cream machine to make this delicious berry ice cream. You just need a freezer and a fun spirit to bring this simple delicious dessert to life.

INGREDIENTS:

  • 1 ¼ cup heavy cream
  • 3 ¼ cup of assorted frozen and/or fresh berries (strawberries, blueberries, raspberries, blackberries)
  • ½  lemon
  • 1 cup fine sugar

DIRECTIONS

Pour the cream into a big bowl and then, using a hand whisk, whisk it until it holds soft peaks. (When you lift the whisk out of the bowl, it should look like snowy mountains.) If you whisk too long, it will become firm and stiff.

Put the berries into a food processor. Squeeze the lemon juice over the fruit, add the sugar, and blend until the berries are all mashed up.Spoon the mashed fruit into the whipped cream and carefully fold everything together.

Spoon into a freezer-proof container (a clean used ice cream container or plastic tub will do), cover with a tight fitting lid. Freeze for 3 hours or until frozen. Serves 6-8
